How to Make Black Eyed Peas Old Virginia Style

This recipe for black eyed peas dates to pre-Civil War times. A Southern tradition holds that eating them on New Year's Day brings good luck the whole year 'round!

  • Black-eyed peas
  • 3 slices of bacon
  • Drained tomato chunks
  • Dark molasses
  • Black pepper

  1. Soak and boil dry black-eyed peas per package instructions.
  2. Fry 3 slices of bacon, preferably in an iron skillet.
  3. Drain and add the black-eyed peas to the cooked bacon, breaking the slices up with a spatula as you do.
  4. Add: tomato chunks (drained), dark molasses, black pepper
  5. Mash the peas as they fry to form a cake-like layer; turn to avoid burning.
  6. Serve hot and crispy!
