How to Make Calico Bread

Calico bread is a tasty marble bread with a unique, beautiful pattern on every slice which resembles the markings of a calico cat. It can be made from any basic white bread recipe in a bread machine or by hand.

  • White bread dough (enough for a medium/large loaf)
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • ⅛ teaspoon yellow food colouring powder
  • 1 tablespoon honey
  • ½ teaspoon vanilla essence
  • ⅛ cup shaved or finely crushed chocolate
  • ⅛ cup Milo or other chocolate drink powder

  1. Prepare the dough following the original recipe until it is ready to bake.
  2. Divide the dough into three equal portions.
  3. Knead the ginger, yellow colouring and the cinnamon into the first portion of dough.
  4. Knead the honey and vanilla into the second portion of dough.
  5. Knead the chocolate and Milo into the third portion of dough.
  6. Stretch or roll the dough into three sausage shapes.
  7. Plait the three sausages on dough together.
  8. Bake according to the original recipe.

  • Make sure to knead the ingredients into the dough thoroughly.
  • You can leave out the food colouring if you don't have any, however the markings may be less striking.
  • A medium/large loaf contains about 5 cups of flour, if the white bread recipe contains much more or less than this you should adjust the amounts of other ingredients accordingly.
  • Experiment with different flavours and colours, but make sure you choose things that will taste good together.
  • For a Christmas treat, try combining red, green and uncoloured dough to make Christmas calico bread.

  • Food colouring can stain your hands. Wear disposable gloves to knead it in, or just stir it in with a spoon.
  • Use caution (and gloves) around hot ovens.
