How to Make Carrot Cake

- 380 g flour
- 180 g sugar
- 120 g brown sugar
- 1 ¼ tsp baking powder
- 2 tsp cinnamon
- 3 eggs
- 1 can of pineapple chunks
- 500 g grated raw carrot
- 1 ½ tsp vanilla
- 1 ½ tsp salt
- 180 ml vegetable oil
for the frosting:
- 220 g cream cheese
- 60 g melted butter
- 500 g icing sugar

- Preheat the oven at 180ºC (350ºF/ gas mark 4).
- Mix the dry ingredients in to a large bowl; add the flour,sugar,brown sugar, the baking powder,the salt and the cinnamon.
- Add another bowl the eggs,oil and the vanilla en mix till it becomes a smooth mixture.
- Pour the egg mixture in the bowl with the flour.
- Add the grated carrot and pineapple then stir well.
- Use the pastry brush to coat the cake tin with some melted butter, and pour the cake mix in.
- Put the cake tin in the middle of the oven and let it baked for 35-40 minutes.
- After about 35 control the cake with a wooden skewer, if it comes out dry then the cake is ready.
- Make the icing; add the icing sugar,the cream cheese and the melted butter en stir till the mixture becomes smooth.
- Let the cake cool down.
- Spoon the frosting on top of the cake,still in the cake tin,use your spatula to smooth the frosting. Let the frosting start to harden.
- Take the cake out of the tin and serve!
