How to Make Carrot Cake

  • 380 g flour
  • 180 g sugar
  • 120 g brown sugar
  • 1 ¼ tsp baking powder
  • 2 tsp cinnamon
  • 3 eggs
  • 1 can of pineapple chunks
  • 500 g grated raw carrot
  • 1 ½ tsp vanilla
  • 1 ½ tsp salt
  • 180 ml vegetable oil

for the frosting:

  • 220 g cream cheese
  • 60 g melted butter
  • 500 g icing sugar

  1. Preheat the oven at 180ºC (350ºF/ gas mark 4).
  2. Mix the dry ingredients in to a large bowl; add the flour,sugar,brown sugar, the baking powder,the salt and the cinnamon.
  3. Add another bowl the eggs,oil and the vanilla en mix till it becomes a smooth mixture.
  4. Pour the egg mixture in the bowl with the flour.
  5. Add the grated carrot and pineapple then stir well.
  6. Use the pastry brush to coat the cake tin with some melted butter, and pour the cake mix in.
  7. Put the cake tin in the middle of the oven and let it baked for 35-40 minutes.
  8. After about 35 control the cake with a wooden skewer, if it comes out dry then the cake is ready.
  9. Make the icing; add the icing sugar,the cream cheese and the melted butter en stir till the mixture becomes smooth.
  10. Let the cake cool down.
  11. Spoon the frosting on top of the cake,still in the cake tin,use your spatula to smooth the frosting. Let the frosting start to harden.
  12. Take the cake out of the tin and serve!
