How to Make Cashew Cream

Cashew nut cream is a great substitute for dairy cream when making vegan desserts. It is also ideal for people unable to consume dairy products generally and it is definitely for everyone who loves cashew nuts!

[edit] Ingredients

  • 1 1/2 cup whole, raw cashews or 1 cup cashew butter
  • 1/3 cup water
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract/essence

[edit] Steps

  1. Grind the cashew nuts if you are using them whole. Do this in a food processor or blender. Be patient as this can take up to 10 minutes before an oily paste begins to form.
  2. Keep processing until the paste is lump free.
  3. Add the remaining ingredients for processing or blending.
  4. Process or blend the paste until well combined.
  5. Remove the cashew cream from the processor or blender. It is now ready to use. It can be spread on toast, used as a sweet sandwich filling with banana slices, added to pie crusts for a sweet pie dish, or used in place of cream on pies, puddings etc.

[edit] Tips

  • This method can be used for other soft nuts as well, such as walnuts.
