How to Make Cayenne Pepper
You can make your own cayenne pepper at home if you've had a bumper chilli pepper crop.

- Remove the stalks from the chilli peppers.
- Dry the chilli peppers in a slow oven until crisp. Keep a regular watch on their progress so that you will know when they have dried.
- Remove from oven and allow to cool completely.
- Place in a mortar and pestle with the salt. Pound the chilli peppers and salt together until you get a powder.
- Store in an airtight container. Use as required, in recipes that call for cayenne pepper.
