How to Make Chicken Mole
Chicken Mole is a very popular food in Mexico. While this recipe is for standard Chicken Mole, Chicken Mole can also be made by simply adding a good amount of chili powder to the classic "Chicken and Dumplings" that is so popular in the southern part of the USA.

- 4-5 lbs chicken
- 3 quarts water
- 1 1/2 - 3 cups flour
- 1/4 cup Gebhardts Chili Powder (Not all chili powders are created equal, Gebhardts Chili Powder is highly recommend!)

- Cut up the chicken and boil in water for 30 minutes or more in a 5 quart pot. (you may de-bone the chicken if desired)
- When the chicken nears being done, put 1/2 cup of white flour into a blender with 1/2 cup water and blend. While blending, add 1/2 cup of white flour, a little at a time, then 1/2 cup more water until well blended.
- In a bowl, add 2 cups of the chicken broth from the pot, whip broth while pouring in the blended mixture.
- Pour this mixture into the pot of boiling chicken.
- Add 1/5 cup Gebhardt's chili powder to the pot of boiling chicken. (More or Less Chili Powder according to taste)
- If you desire the Chicken Mole to be thicker, simply repeat steps 2, 3, and 4...using only 1/2 the amount at a time.
- Simmer for about 10 minutes.

- Serve with refried beans, tortillas, and chili sauce (see below).Chili Sauce: In a blender, blend in 1 whole tomato, 1 jalapeño pepper, and 1/2 tsp salt until smooth. (You can add more jalapeños for more heat or more tomato for less heat.)
