How to Make Curry Carrot Soup

This recipie combines the sweetness of carrot soup with the zest of yellow curry. This good as an appetizer, or as a main course.

  • 4 large carrots, peeled and chopped
  • 1/2 cup vegetable broth
  • 1/2 cup plain yoghurt
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp sage
  • 3 tsp yellow curry powder

  1. Boil the chopped carrots until tender.
  2. Drain carrots.
  3. Add yoghurt, spices, broth, and carrots together in a blender.
  4. Puree until smooth.
  5. Heat on medium on a saucepan, stirring continuously, until hot.
  6. Serve hot with a sprig of sage.
