How to Make Five Spice Powder
This is a traditional Chinese blend of five ground spices, with a strong flavour of star anise. Excellent using in for Chinese dishes and is known as the "Chinese garam masala".[1]

- 1 1/2 tablespoons star anise
- 3 teaspoons ground fennel
- 3 teaspoons ground cassia
- 1 teaspoon ground Sichuan pepper
- 1/2 teaspoon ground cloves

- Combine the five ground spices in a bowl.
- Mix well.
- Pour into an airtight container. The mixture will stay fresh for 1 - 3 months. Keep in the fridge for extended freshness.

This version replaces cassia with ginger and uses the whole spice rather than the ground version but is another good version. Be aware that it takes a while to get to the actual recipe!

- If possible, the best ingredients are freshly ground. Use a spice blender or a mortar and pestle to grind the spices at home.
