How to Make Fried or Baked Bannock

A simple recipe where you can substitute ingredients to create your own signature style. This tastes great with Hamburgers or Tomato Soup.

  • 8 cups flour
  • 1/4 cup sugar
  • 2 tsp salt
  • 8 tsp baking powder
  • 1/2 cup lard (baked bannock only) or oil
  • 4 cups lukewarm water

Baked Bannock

  1. Place dry ingredients in a bowl. Mix well. If you are using lard, mix it in now.
  2. Stir in water and oil.
  3. Mix dough until it is hard enough to knead.
  4. Poke holes in the dough with a fork when it is big enough to fit on a cookie sheet and 1/2 inch (1.25cm) thick.
  5. Bake for 45 minutes in a 400 degree oven.

Fried Bannock

  1. Place dry ingredients in a bowl. Mix well.
  2. Stir in water.
  3. Mix dough until it is hard enough to knead.
  4. Roll dough out to a bit less than 1/2 inch (1.25cm) thick.
  5. In a large frying pan heat oil (medium heat or lower)until a drop of water sizzles if dropped in it. Make sure the oil is deep enough so that the dough floats.
  6. Cut the rolled dough with a large glass.
  7. Prick the cut dough with a fork or cut slits in it to fry it thoroughly.
  8. Turn dough over until both sides are brown. Depending on the heat of the oil, this should take a minute or two per side.

  • Check the bottom every now and again so that it doesn't overbake.
  • Add an egg or two to make the dough softer, or raisins for raisin bannock.
  • Substitute milk, buttermilk, or broth for the water for more flavor.
  • Substitute yeast for baking powder and let rise as directed.
  • You may also cut the dough into any shape you wish for either methods.

  • For Fried Bannock, dust off the flour before frying or the flour will burn at the bottom of the frying pan.
  • Be sure to have your dough cut and ready because frying doesn't take very long.
