How to Make Fusilli with Blue Cheese Sauce

This pasta dish can be served at any occasion and either as a meal or side dish. Try this with a side of green salad.

Serves 4 people.

  • 1 lb 2 ounces (500 grams) of fusilli pasta
  • 7 ounces (200 grams) of walnuts
  • 10.5 ounces (300 grams) of blue cheese
  • 18 ounces (1/2 liter) of double cream
  • handful of chopped parsley
  • 5 tablespoons of olive oil
  • salt and pepper

  1. Set aside 100 grams of the blue cheese for garnish. Crumble up the rest in a saucepan over high heat. Add the double cream into the pan as well.
  2. Wait until the cheese turns into a boil and then turn the heat down. Simmer and season with salt and pepper.
  3. Fill a large pot halfway with water. Sprinkle some salt in the water and add the olive oil. Place the lid on, and bring the water to a boil.
  4. Add the pasta to the water pot and cook the noodles for 11 minutes.
  5. Drain the pasta with a colander.
  6. Place the pasta in a bowl. Add the walnuts and parsley.
  7. Pour the cheese sauce over the pasta mixture and mix everything together.
  8. Serve onto individual plates and add final touches of garnishes with some leftover walnuts and parsley.

  • Walnuts don't need to be in this recipe, but do add a nice crunch to the meal.
