How to Make Green Bean Puree

This first and one ingredient puree is very nutritious.

Makes about 1 to 1 1/4 cups

  • 1/2 pound or 3 cups of fresh green beans (trimmed)
  • Water

  1. Add the green beans to a saucepan.
  2. Pour water into the saucepan so that it barely covers the beans.
  3. Boil the green beans and then turn the heat on low.
  4. Cover the saucepan with a lid and leave it to simmer for about 10 to 12 minutes.
  5. Use a strainer to drain the green beans from the water, but put some of the cooked/boiled water on the side.
  6. Use a blender or food processor to puree the green beans. Use the water you put on the side to get the consistency you want.
  7. Use the green bean puree within that same day or freeze it up to one month.
