How to Make Grilled Chilli Baby Spare Ribs
This exotic flavoring spare ribs dish will be the main event at your next barbecue.

- 14 ounces of baby back spare ribs (divided into 2 racks of four ribs)
- 4 shallots (sliced)
- 2 lemon grass stalks (chopped)
- 1 coriander (chopped, root ends only)
- 2 tablespoons of ketchup
- 4 tablespoons of brown sugar
- 4 tablespoons of honey
- 2 ounces of soy sauce
- 4 tablespoons of sambel olek (chilli sauce; found in Asian food suppliers)
- 25 fl ounces of water
- 5 stems of coriander (garnish)

- Prepare your barbecue. Be sure to start a charcoal barbecue about 30 minutes or a gas barbecue about 20 minutes before planning to cook the ribs.
- Prepare the marinade. Combine the water, soy sauce, honey, sugar, sambal olek, lemon grass, coriander, ketchup, and shallots in a saucepan.
- Cook the spare ribs for about 1 1/2 to 2 hours or until they are soft, but not falling off the bone when you touch them.
- Heat the marinade. Leave it to simmer with the lid partially on the top.
- Reduce the marinade. Use a strainer with the marinade and separate the solids from the liquids. Reduce the liquid for a few minutes.
- Barbecue the ribs. Use the reduced marinate and glaze the ribs. Grill for about 2 to 3 minutes (per side).
- Serve. Place the ribs on a plate and garnish with a sprig of coriander.
