How to Make Guacamole

This is a quick overview of a favorite homemade guacamole recipe. It's fast and easy, and always a crowd pleaser...always!

  • Lime
  • Cilantro
  • Garlic (whole cloves)
  • Salt
  • Pepper
  • Onion
  • Jalapeno
  • Serrano chile
  • Tomatoes

  1. Cut two ripe (soft to the touch) avocados in half and mash them up with a fork until they aren't chunky. (unless you like chunky guacamole)
  2. Squeeze fresh lime juice into a small bowl. Add a very small amount of salt and pepper. The reason for lime and not lemon is that limes will help keep the avocados fresh for a while longer, and it basically takes over the flavor.
  3. Finely chop the cilantro. Cilantro is like a lemony parsley when eaten by itself, and when added to guacamole it complements the lime. Add the cilantro to the lime juice.
  4. Dice the tomatoes (2-3, depending upon the size) and add those to the lime juice.
  5. Seed and finely dice the chiles (Jalapeno and Serrano). These can add quite a lot of heat to the guacamole, so be careful with how much you add. A tablespoon or so of diced chiles is probably a good start. Add these to the lime juice.
  6. Chop the garlic and add that and the other spices (salt and pepper) to the avocado.
  7. Mix the lime juice, tomato, and chiles in slowly.
  8. Serve immediately.

  • If you have a Dehydrator you can make tasty Guacamole Roll Ups
  • Lime seeds can be easily caught by holding a small strainer or cheesecloth over the bowl and squeezing the juice through the sieve. Alternatively, you can squeeze the lime cut-side up, keeping the seeds in the lemon and the juice will flow down into the bowl.
  • To keep the guacamole from going brown, place plastic wrap on the surface of the guacamole to ensure that no air gets in.
  • A common misconception is that placing the pit from one of the avocados back in the finished guacamole will keep the guacamole from turning brown. Doing so will only protect the guacamole directly beneath the pit, but any which is exposed to air will brown.
  • Try a bunch of add-ins, such as pico de gallo, chili, lime or hot sauce. Or try fresh herbs and spices, such as coriander or oregano. It will turn the authentic guacamole into just avocado dip
  • A very small amount of Vinegar can also be used to give the guacamole a kick.
  • Try adding some drained, spicy Rotel tomatoes, it will give your guacamole a real tasty zing.
  • At parties, serve it with chips, salsa, and sour cream.
  • Leftover guacamole on a bagel with cream cheese, Tabasco sauce, and garlic is really tasty!
