How to Make Italian War Soup

During World War II in Italy, times were tough, meat was scarce and this hearty, family soup became a family favorite by necessity.

  • 4 cups of diced potatoes
  • 1 small can of tomato paste
  • Chicken bouillon to taste
  • 1 large can of white beans
  • 1 pound of ditalini pasta
  • 1 large onion, finely diced
  • 1 gallon of water

  1. Bring water to boil,
  2. add potatoes and onions,
  3. cook potatoes until done;
  4. add bullion, beans and tomato paste;
  5. add pepper to taste.

  • Serve with fresh Italian bread.
