How to Make Maple Walnuts
These are delicious candied walnut treats with the overlaid flavor of maple. They are a great alternative to cookies or biscuits with cream fillings and are a little daintier. They are also fabulous bazaar or fĂȘte items and make delicious gifts. This is an original 1880s recipe.

- 1 egg white
- Powdered/icing sugar, enough to make a filling paste
- Walnut meats, freshly halved if possible - as many as you wish to make
- 2 tbsp maple sugar
- 1 cup water

- Make the frosting filling:
- Beat the white of one egg to a stiff froth.
- Stir in enough powdered sugar to make it like hard frosting.
- Make the syrup. Boil the maple sugar in a cup of water until a syrup forms.
- Dip the walnut meats in the syrup.
- Spoon up small amounts of the filling and spread between two halves of a walnut and press down hard to join the two walnuts.
- Set aside to let the filling harden.
- Serve. Once set, the walnuts are ready for serving or for packaging as a great foodie gift.

- Dates may be prepared in this way also.
- If making a larger amount, the proportion of 2 tablespoons maple sugar to one cup water can be doubled etc. for making the syrup.
