Spanish rice is a classic, tasty dish that's easy to make. All you need are few simple ingredients and a large skillet with a lid. Here's how.

  • 2 Tablespoons vegetable or olive oil
  • 1 cup long grain rice
  • 1 cube of chicken bouillon
  • small amount of mixed vegetables (optional)
  • 3 Tablespoons onion
  • 1 clove garlic, minced
  • 1 can of tomato sauce
  • 2 1/2 cups water
  • Salt and pepper to taste

  1. Heat the oil in a hot skillet.
  2. Add the rice and stir it until slightly browned, 2-3 minutes on medium heat.
  3. Add the chicken bouillon and vegetables if you are using them. Add the onion and garlic and sauté for a minute or two.
  4. Add the tomato sauce, water, salt and pepper. Stir to blend.
  5. Cover the skillet. Turn heat to a very low setting and allow to cook without disturbing for 15-20 minutes, until the liquid is absorbed. Don't open the lid.
  6. Let it cool for a while and serve. This time also helps any leftover liquid to be absorbed and helps the flavors to blend. Serves 5 people.

  • You can replace the diced tomato and onion and a little of the tomato sauce for a can of rotel diced tomatoes with chiles (very spicy, but good).

  • Don't allow the rice to burn. You just want it to get a golden brown before adding veggies, liquid and spices.
